Kabsa is the Arabian Peninsula's rice centerpiece: chicken simmered with kabse spices, the broth then raising turmeric-golden rice studded with peppers, carrots, corn, mushrooms and raisins. Everything cooks into one fragrant, festive platter built for sharing. The raisins' sweetness against the spice is the signature move.
Ingredients
- 400g Chicken
- 1 cup Rice
- 1 Green Pepper
- 1 Red Pepper
- 2 Mushrooms
- 1 Sweetcorn
- 2 Carrots
- Handful Raisins
- 1 tsp Turmeric
- 1 tsp Kabse Spice
- Pinch Salt
- Pinch Black Pepper
Instructions

- Caramelize the chicken with olive oil then add a maggi cube and boil it for around 30 minutes.

- In another pot, add all the veggies and caramelize them till they are soft.

- Once everything is done, add the rice, raisins & spices to the veggies and add 2 and a half cups of water for the rice to cook.

- Once the rice is done put everything in the oven.
