Ingredients
- 400 g extra-firm tofu
- 250 g Yukon gold potatoes
- 200 g cherry tomatoes
- 90 g baby spinach
- 2 tbsp extra-virgin olive oil
- 2 tbsp nutritional yeast
- 1 tsp ground turmeric
- 1.5 tsp smoked paprika
- 3 cloves garlic
- 0.5 tsp fine sea salt
- 0.25 tsp black pepper
- 2 tbsp fresh parsley
Instructions
- Dice the Yukon gold potatoes into 1 cm cubes. Heat 1 tbsp of the olive oil in a wide non-stick skillet over medium-high heat, add the potatoes in a single layer, and leave them undisturbed for 4 minutes so they can form a crust — moving them early is why home scrambles go soggy. Toss and cook 4 minutes more, until a fork slides in with no resistance and the edges are deep golden.
- While the potatoes cook, drain the extra-firm tofu and press it between two clean kitchen towels for 2 minutes to squeeze out surface water. Crumble it into rough bite-sized pieces with your hands, not a fork, so you keep some large curds instead of a uniform mush.
- Push the potatoes to one side of the pan, add the remaining olive oil and the crumbled tofu, and let it sit untouched for 3 minutes until the bottom edges turn light golden and release from the pan on their own.
- Sprinkle over the ground turmeric, smoked paprika, nutritional yeast, fine sea salt and black pepper, then fold everything together for about 1 minute — the pan should smell warm and toasty and the tofu should take on an even egg-yellow colour.
- Slice the garlic thinly, add it with the cherry tomatoes to the pan, and press the tomatoes gently with the back of a spoon. Cook 3 minutes over medium heat until the skins split, the juices go jammy, and the garlic smells sweet rather than sharp.
- Kill the heat, pile the baby spinach on top and fold it through; the residual pan heat wilts it in about 60 seconds and keeps it bright green instead of grey. Scatter with chopped fresh parsley and serve straight from the skillet.
