Ingredients
- 2 fillets salmon fillets
- 1.25 cups cooked brown rice
- 1 bunch asparagus, cut in pieces
- 1 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp blackening seasoning
Instructions
- Pat the salmon dry and coat the flesh side generously with the blackening seasoning, pressing it on.
- Heat the olive oil in a skillet over medium-high until nearly smoking, then cook the salmon seasoned-side down for 3 minutes until a dark crust forms, flip, and cook 2 to 3 minutes more until it flakes.
- Add the asparagus and garlic to the pan and cook 4 minutes until crisp-tender.
- Stir the lemon juice into the warm brown rice, divide between bowls, and top with the blackened salmon and asparagus.
