Ingredients

  • 2 fillets salmon fillets
  • 1.25 cups cooked brown rice
  • 1 bunch asparagus, cut in pieces
  • 1 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp blackening seasoning

Instructions

  1. Pat the salmon dry and coat the flesh side generously with the blackening seasoning, pressing it on.
  2. Heat the olive oil in a skillet over medium-high until nearly smoking, then cook the salmon seasoned-side down for 3 minutes until a dark crust forms, flip, and cook 2 to 3 minutes more until it flakes.
  3. Add the asparagus and garlic to the pan and cook 4 minutes until crisp-tender.
  4. Stir the lemon juice into the warm brown rice, divide between bowls, and top with the blackened salmon and asparagus.
