Ingredients
- 3/4 cup nonfat plain Greek yogurt
- 1/2 cup mixed berries
- 1/3 cup rolled oats
- 1 tbsp almond butter
- 1 tbsp chia seeds
- 1 tsp honey
Instructions
- Toast the oats for crunch: spread them in a dry skillet over medium heat and stir often until they smell nutty and turn a shade darker, about 3 minutes. Tip onto a plate so they stop cooking.
- Spoon the Greek yogurt into a wide bowl and stir in the chia seeds. Let it sit for 2 minutes — the chia swells slightly and thickens the yogurt so the toppings sit up instead of sinking.
- If your berries are large, halve them so every spoonful gets fruit. Scatter the berries and toasted oats over the yogurt.
- Warm the almond butter for 10 seconds in the microwave so it pours, then drizzle it over the bowl along with the honey. Eat right away while the oats are still crisp.
