Chewy noodles and seared seitan tossed in a punchy, glossy black-pepper sauce with onions and peppers — a 20-minute takeout-style dinner with 40g of plant protein. Fully vegan.
Ingredients
- 6 oz lo mein or udon noodles
- 9 oz seitan
- 2.5 tbsp low-sodium soy sauce
- 1.5 tbsp vegetarian oyster sauce
- 1.5 tsp coarsely ground black pepper
- 2 tsp maple syrup
- 1 tbsp neutral oil
- 1 small yellow onion
- 1 medium green bell pepper
- 3 cloves garlic
- 1 tsp cornstarch
Instructions
- Cook the noodles per package directions, drain, and toss with a few drops of oil so they don't stick. Whisk the soy sauce, vegetarian oyster sauce, maple syrup, black pepper and cornstarch with 3 tbsp water into a sauce.
- Slice the seitan into thin strips, the onion into wedges and the bell pepper into squares; mince the garlic.
- Heat the oil in a large skillet or wok over high until nearly smoking. Sear the seitan 3-4 minutes until browned at the edges, then add the onion, bell pepper and garlic and stir-fry 3 minutes until crisp-tender and charred in spots.
- Pour in the sauce and let it bubble 30 seconds until it thickens and turns glossy. Add the noodles and toss with tongs for 1-2 minutes until every strand is coated and glistening with black pepper.
- Serve immediately, while the noodles are hot and the pepper is fragrant.
