A folded diner-style omelette packed with diced ham and melty pepper jack, with just enough heat to wake you up.
Ingredients
- 3 large eggs
- 1 tsp unsalted butter
- 1.5 oz pepper jack cheese, grated
- 2 oz deli ham, diced
- 2 tbsp red bell pepper, finely diced
- 1 pinch fine salt
- 1 pinch black pepper
Instructions
- Whisk the eggs with the salt and black pepper until fully uniform and slightly frothy, about 20 seconds.
- Melt the butter in an 8-inch nonstick skillet over medium heat until foaming, then add the diced ham and bell pepper and cook for 1 to 2 minutes until the ham edges brown lightly and smell savory.
- Pour in the eggs and let them set for 20 seconds, then use a spatula to pull the edges inward while tilting the pan so the raw egg flows out to the sides. Cook about 2 minutes until the top is just barely wet.
- Scatter the grated pepper jack across one half, let it melt for 30 seconds, then fold the bare half over the filling. Slide onto a plate seam-side down and rest 1 minute so the cheese finishes melting.
