A folded diner-style omelette packed with diced ham and melty pepper jack, with just enough heat to wake you up.

Ingredients

  • 3 large eggs
  • 1 tsp unsalted butter
  • 1.5 oz pepper jack cheese, grated
  • 2 oz deli ham, diced
  • 2 tbsp red bell pepper, finely diced
  • 1 pinch fine salt
  • 1 pinch black pepper

Instructions

  1. Whisk the eggs with the salt and black pepper until fully uniform and slightly frothy, about 20 seconds.
  2. Melt the butter in an 8-inch nonstick skillet over medium heat until foaming, then add the diced ham and bell pepper and cook for 1 to 2 minutes until the ham edges brown lightly and smell savory.
  3. Pour in the eggs and let them set for 20 seconds, then use a spatula to pull the edges inward while tilting the pan so the raw egg flows out to the sides. Cook about 2 minutes until the top is just barely wet.
  4. Scatter the grated pepper jack across one half, let it melt for 30 seconds, then fold the bare half over the filling. Slide onto a plate seam-side down and rest 1 minute so the cheese finishes melting.
