Ingredients
- 1 flour tortilla, 8-inch
- 2 large eggs
- 1 oz Swiss cheese, grated
- 2 oz deli ham, diced
- 1 tsp unsalted butter
- 2 tbsp salsa
- 1 pinch black pepper
Instructions
- Whisk the eggs with the black pepper until uniform. Warm the flour tortilla in a dry skillet over medium heat for about 20 seconds per side until pliable, then set aside.
- Melt the butter in the same skillet over medium heat, add the diced ham, and cook for 1 minute until the edges brown and smell savory.
- Pour in the eggs and stir gently with a spatula for about 2 minutes, folding soft curds, until just set. Turn off the heat and scatter the Swiss over the top so it melts from the residual warmth.
- Spread the salsa down the center of the warm tortilla, pile the ham-and-egg scramble on top, fold in the two sides, then roll tightly from the bottom into a burrito. Set seam-side down for a few seconds to seal before serving.
