Transform your leftover leaves into a delicious and nutritious frittata, perfect for breakfast or a light dinner.

Ingredients

  • 2 cups leftover leaves
  • 4 large eggs
  • 1/2 cup cheese (feta or goat cheese)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup onion (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. If using, add diced onion to the skillet and sauté until translucent, about 3-4 minutes.
  5. Add the leftover leaves to the skillet and cook until wilted, about 2-3 minutes.
  6. Pour the egg mixture over the leaves and sprinkle cheese on top.
  7. Cook on the stove for 2-3 minutes until the edges start to set.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the frittata is set.
  9. Remove from oven, let it rest for a few minutes, then slice and serve.
  10. Serve warm, garnished with additional herbs if desired.
