Transform your leftover leaves into a delicious and nutritious frittata, perfect for breakfast or a light dinner.
Ingredients
- 2 cups leftover leaves
- 4 large eggs
- 1/2 cup cheese (feta or goat cheese)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup onion (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together the eggs, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- If using, add diced onion to the skillet and sauté until translucent, about 3-4 minutes.
- Add the leftover leaves to the skillet and cook until wilted, about 2-3 minutes.
- Pour the egg mixture over the leaves and sprinkle cheese on top.
- Cook on the stove for 2-3 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes until the frittata is set.
- Remove from oven, let it rest for a few minutes, then slice and serve.
- Serve warm, garnished with additional herbs if desired.
