Juicy shrimp in a garlicky burst-tomato sauce with a whisper of chili and lemon — fast enough for a weeknight, good enough for guests.

Ingredients

  • 12 oz raw shrimp, peeled
  • 2 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 2 cups cherry tomatoes
  • 1/2 tsp red pepper flakes
  • 1/4 cup dry white wine or broth
  • 3 tbsp fresh parsley, chopped
  • 1/2 medium lemon

Instructions

  1. Pat the shrimp dry and season with salt and pepper. Heat 1 tablespoon of the oil in a large skillet over medium-high and sear the shrimp 1 minute per side until just pink; remove — they'll finish later.
  2. Lower the heat to medium, add the rest of the oil with the garlic and red pepper flakes and cook 1 minute until the garlic is golden and fragrant (don't let it brown or it turns bitter).
  3. Add the tomatoes and a pinch of salt and cook 5-6 minutes, pressing some with your spoon, until they collapse into a glossy sauce.
  4. Pour in the wine and simmer 2 minutes to cook off the sharpness, then return the shrimp just until warmed through, about 1 minute.
  5. Off the heat, stir in the parsley and a squeeze of lemon. Serve with crusty bread to mop up the sauce.
