Transform your leftovers into delicious and hearty savory potato cakes that are high in protein and flavor. Perfect for a filling snack or a main course!
Ingredients
- 2 medium potatoes
- 1 medium carrots
- 1/2 medium onion
- 1/2 cup protein powder
- 1/4 cup flour
- 1 teaspoon sugar
- spices (to taste)
- 1 tablespoon vinegar
- 1/2 cup canned beans (optional)
Instructions
- Peel and dice the potatoes and carrots into small pieces.
- Place the diced potatoes and carrots in a pot of water and bring to a boil.
- Once boiled until tender, drain the potatoes and carrots and let them cool slightly.
- In a large bowl, mash the potatoes and carrots together until smooth.
- Finely chop the onion and add it to the mashed mixture along with protein powder, flour, sugar, spices, and vinegar. Mix until combined.
- Heat a non-stick skillet over medium heat and add a little oil if desired.
- Form the mixture into patties and place them in the heated skillet. Cook for about 4-5 minutes on each side until golden brown.
- Once cooked, remove the cakes from the skillet and let them rest on a paper towel.
- Serve warm with your favorite dipping sauce or salad.
