Transform your leftovers into delicious and hearty savory potato cakes that are high in protein and flavor. Perfect for a filling snack or a main course!

Ingredients

  • 2 medium potatoes
  • 1 medium carrots
  • 1/2 medium onion
  • 1/2 cup protein powder
  • 1/4 cup flour
  • 1 teaspoon sugar
  • spices (to taste)
  • 1 tablespoon vinegar
  • 1/2 cup canned beans (optional)

Instructions

  1. Peel and dice the potatoes and carrots into small pieces.
  2. Place the diced potatoes and carrots in a pot of water and bring to a boil.
  3. Once boiled until tender, drain the potatoes and carrots and let them cool slightly.
  4. In a large bowl, mash the potatoes and carrots together until smooth.
  5. Finely chop the onion and add it to the mashed mixture along with protein powder, flour, sugar, spices, and vinegar. Mix until combined.
  6. Heat a non-stick skillet over medium heat and add a little oil if desired.
  7. Form the mixture into patties and place them in the heated skillet. Cook for about 4-5 minutes on each side until golden brown.
  8. Once cooked, remove the cakes from the skillet and let them rest on a paper towel.
  9. Serve warm with your favorite dipping sauce or salad.
