Transform leftover zucchini into flavorful tacos packed with black beans and fresh toppings for a healthy meal.

Ingredients

  • 1 medium zucchini
  • 1 cup black beans
  • 4 pieces corn tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro
  • 1 medium avocado
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Wash and dice the zucchini into small cubes.
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced zucchini to the skillet and sauté until tender, about 5-7 minutes.
  4. Stir in black beans, cumin, salt, and pepper. Cook for another 3-5 minutes until heated through.
  5. Warm corn tortillas in a separate skillet for about 1 minute on each side.
  6. Remove the skillet from heat and squeeze lime juice over the mixture. Add chopped cilantro and mix well.
  7. Slice the avocado and set aside.
  8. Assemble tacos by placing the zucchini and black bean mixture on warm tortillas, topping with avocado slices.
  9. Serve immediately and enjoy your healthy tacos!
