Transform leftover zucchini into flavorful tacos packed with black beans and fresh toppings for a healthy meal.
Ingredients
- 1 medium zucchini
- 1 cup black beans
- 4 pieces corn tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 tablespoon lime juice
- 2 tablespoons cilantro
- 1 medium avocado
- salt (to taste)
- pepper (to taste)
Instructions
- Wash and dice the zucchini into small cubes.
- Heat olive oil in a skillet over medium heat.
- Add diced zucchini to the skillet and sauté until tender, about 5-7 minutes.
- Stir in black beans, cumin, salt, and pepper. Cook for another 3-5 minutes until heated through.
- Warm corn tortillas in a separate skillet for about 1 minute on each side.
- Remove the skillet from heat and squeeze lime juice over the mixture. Add chopped cilantro and mix well.
- Slice the avocado and set aside.
- Assemble tacos by placing the zucchini and black bean mixture on warm tortillas, topping with avocado slices.
- Serve immediately and enjoy your healthy tacos!
