A delicious and hearty breakfast stack featuring crispy bacon, a sunny-side-up egg, and sautéed greens, perfect for starting your day off right.
Ingredients
- 4 slices bacon
- 2 large eggs
- 1 bunch broccolini or asparagus
- 1 tablespoon olive oil
- salt (to taste)
- pepper (to taste)
- 2 tablespoons mayonnaise
Instructions
- Cook the bacon in a skillet over medium heat until crispy.
- Remove the bacon from the skillet and set aside, leaving the drippings in the pan.
- Add the broccolini or asparagus to the skillet and sauté until tender, about 5 minutes.
- Season with salt and pepper to taste, then remove from heat and set aside.
- In the same skillet, crack the eggs and cook sunny-side up for about 3-4 minutes.
- Assemble the stack by placing the sautéed greens on a plate, followed by the bacon, and top with the fried egg.
- Serve with a dollop of mayonnaise on the side.
