Ingredients

  • 0.8 cup rolled oats
  • 2 large eggs
  • 1 medium banana
  • 0.5 cup 2% milk
  • 1 tbsp creamy peanut butter
  • 0.5 cup mixed berries
  • 1 tsp baking powder

Instructions

  1. Blend the rolled oats, eggs, banana, milk, and baking powder in a blender for 30 seconds until you have a smooth, pourable batter; let it rest 2 minutes to thicken.
  2. Heat a lightly oiled nonstick skillet over medium, pour in small rounds of batter, and cook 2 minutes until bubbles form across the surface and the edges look set.
  3. Flip each pancake and cook 1 to 2 minutes more until golden and cooked through.
  4. Stack the pancakes, scatter the mixed berries over the top, and finish with a warm drizzle of the peanut butter.
