Ingredients
- 11 oz 90% lean ground beef
- 1.25 medium potato, diced small
- 1 medium onion, diced
- 0.9 cup tomato, diced
- 2 oz cheddar cheese, grated
- 3 cloves garlic, minced
- 1 tbsp olive oil
Instructions
- Heat the olive oil in a skillet over medium-high, add the diced potato, cover, and cook 10 minutes until tender and golden, then set aside.
- In the same skillet, brown the ground beef with the onion for 6 minutes until no pink remains, then stir in the garlic and diced tomato and simmer 3 minutes until saucy.
- Return the potatoes, stir to combine, then scatter the grated cheddar over the top.
- Cover and cook 2 minutes until the cheese is fully melted and bubbling, then serve straight from the pan.
