Buttery flaked salmon and asparagus over brown rice with a squeeze of lemon — a balanced, satisfying bowl that eats light but keeps you full.
Ingredients
- 2 fillets salmon fillets
- 1.25 cups cooked brown rice
- 1 bunch asparagus, cut in pieces
- 1.5 tbsp lemon juice
- 3 cloves garlic, minced
- 1.5 tbsp unsalted butter
Instructions
- Season the salmon with salt and sear in a lightly oiled skillet over medium-high for 3 minutes per side until it flakes easily, then remove and flake into large pieces.
- Add the butter, minced garlic, and asparagus pieces to the same skillet and cook 4 minutes until the asparagus is crisp-tender and coated in garlic butter.
- Stir the lemon juice into the warm brown rice and divide between two bowls.
- Top the rice with the flaked salmon and garlicky asparagus, spooning any pan butter over the top.
