Fluffy blender pancakes made from oats and grated apple — naturally sweet, no refined flour, and ready in twenty minutes.
Ingredients
- 1 cup rolled oats
- 1 medium apple, grated
- 2 large eggs
- 1/2 cup milk
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp coconut oil, for the pan
Instructions
- Blend the oats into a fine flour in a blender. Add the eggs, milk, grated apple, maple syrup, vanilla, baking powder, cinnamon and a pinch of salt; blend smooth and let the batter rest 5 minutes so it thickens.
- Heat a nonstick pan over medium with a little coconut oil until a drop of batter sizzles gently.
- Pour 1/4-cup pools and cook 2-3 minutes, until bubbles form on top and the edges look set, then flip and cook 1-2 minutes more until golden and springy to the touch.
- Keep warm while you cook the rest, then serve stacked with extra grated apple and a drizzle of maple syrup.
