Stir it together at night, wake up to a thick, creamy, peanut-buttery breakfast with over 20 grams of plant protein — no cooking, no morning effort. Fully vegan.
Ingredients
- 1/2 cup rolled oats
- 3/4 cup soy milk
- 1 tbsp natural peanut butter
- 1.5 tbsp hemp seeds
- 1 tbsp chia seeds
- 1 tsp maple syrup
- 1/4 tsp ground cinnamon
Instructions
- In a jar or bowl with a lid, stir together the oats, hemp seeds, chia seeds, and cinnamon so the seeds are evenly distributed and won't clump.
- Add the soy milk, peanut butter, and maple syrup. Stir hard for about 30 seconds until the peanut butter is fully blended in and there are no dry pockets of oats.
- Cover and refrigerate overnight, or at least 4 hours. The oats and chia drink up the liquid and the mixture thickens to a soft, spoonable, pudding-like texture.
- In the morning, give it a stir. If it's thicker than you like, loosen it with a splash of soy milk. Eat cold, straight from the jar, topped with sliced banana or berries if you have them.
