Cozy make-ahead oats with fresh diced apple, warm cinnamon, and crunchy walnuts that taste like apple pie but come ready to eat cold from the fridge.
Ingredients
- 0.5 cup rolled oats
- 0.5 cup unsweetened almond milk
- 0.5 cup nonfat Greek yogurt
- 0.5 medium apple, finely diced
- 1 tbsp chia seeds
- 1 tbsp walnuts, chopped
- 1 tbsp maple syrup
- 0.5 tsp ground cinnamon
Instructions
- In a jar, stir together the rolled oats, chia seeds, Greek yogurt, almond milk, maple syrup, and cinnamon until the oats are fully moistened and the mixture is uniform.
- Fold in most of the diced apple, reserving a small handful to keep crisp for topping in the morning.
- Seal the jar and refrigerate at least 6 hours or overnight so the oats and chia soften into a thick, creamy base.
- In the morning, top with the reserved diced apple and the chopped walnuts for crunch, then eat cold or gently warmed.
