Ingredients

  • 0.5 cup rolled oats
  • 0.5 cup unsweetened almond milk
  • 0.5 cup nonfat Greek yogurt
  • 0.5 medium apple, finely diced
  • 1 tbsp chia seeds
  • 1 tbsp walnuts, chopped
  • 1 tbsp maple syrup
  • 0.5 tsp ground cinnamon

Instructions

  1. In a jar, stir together the rolled oats, chia seeds, Greek yogurt, almond milk, maple syrup, and cinnamon until the oats are fully moistened and the mixture is uniform.
  2. Fold in most of the diced apple, reserving a small handful to keep crisp for topping in the morning.
  3. Seal the jar and refrigerate at least 6 hours or overnight so the oats and chia soften into a thick, creamy base.
  4. In the morning, top with the reserved diced apple and the chopped walnuts for crunch, then eat cold or gently warmed.
