Taco-seasoned beef with tender potatoes, corn, and melty cheddar — a fun, one-pan mashup of taco night and a loaded skillet.

Ingredients

  • 10.5 oz 90% lean ground beef
  • 1.5 medium potato, diced small
  • 0.75 cup onion, diced
  • 0.6 cup tomato, diced
  • 1.5 oz cheddar cheese, grated
  • 0.5 cup corn kernels
  • 1 tbsp taco seasoning

Instructions

  1. Cook the diced potato in a lightly oiled skillet over medium-high for 10 minutes, covered, until tender and lightly browned, then push aside.
  2. Add the ground beef and onion and cook 6 minutes, breaking up the meat, until no pink remains, then drain excess fat.
  3. Stir in the taco seasoning with a splash of water, then add the diced tomato and corn and cook 2 minutes until saucy.
  4. Scatter the grated cheddar over the top, cover, and cook 1 to 2 minutes until melted and bubbling.
