Ingredients

  • 2 medium potato, large for baking
  • 10 oz 90% lean ground beef
  • 0.6 cup onion, diced
  • 2 oz cheddar cheese, grated
  • 0.4 cup tomato, diced
  • 2.5 tbsp sour cream
  • 0.5 tbsp olive oil

Instructions

  1. Pierce the potatoes and microwave 8 to 10 minutes until soft, then halve and scoop most of the flesh into a bowl, leaving sturdy shells.
  2. Brown the ground beef with the onion in the olive oil for 6 minutes until no pink remains, then stir in the diced tomato and a pinch of salt.
  3. Mash the scooped potato with the sour cream and half the cheddar, then fold in the beef mixture and pile it back into the shells.
  4. Top with the remaining cheddar and bake at 425 F for 8 to 10 minutes until the cheese is melted and golden.
