Ingredients
- 2 medium potato, large for baking
- 10 oz 90% lean ground beef
- 0.6 cup onion, diced
- 2 oz cheddar cheese, grated
- 0.4 cup tomato, diced
- 2.5 tbsp sour cream
- 0.5 tbsp olive oil
Instructions
- Pierce the potatoes and microwave 8 to 10 minutes until soft, then halve and scoop most of the flesh into a bowl, leaving sturdy shells.
- Brown the ground beef with the onion in the olive oil for 6 minutes until no pink remains, then stir in the diced tomato and a pinch of salt.
- Mash the scooped potato with the sour cream and half the cheddar, then fold in the beef mixture and pile it back into the shells.
- Top with the remaining cheddar and bake at 425 F for 8 to 10 minutes until the cheese is melted and golden.
