A make-ahead vanilla chia pudding boosted with pea protein and topped with berries — a no-cook vegan breakfast with 22g of protein under 400 calories. Fully vegan.
Ingredients
- 3 tbsp chia seeds
- 1 scoop vanilla pea protein powder
- 1 cup unsweetened almond milk
- 2 tsp maple syrup
- 1/3 cup fresh raspberries
- 1 tbsp sliced almonds
Instructions
- In a jar, whisk the almond milk, pea protein and maple syrup until the powder is fully dissolved and there are no lumps — whisk hard, protein powder clumps if rushed.
- Add the chia seeds and whisk again, then wait 5 minutes and whisk once more to break up any clumps that settle.
- Cover and refrigerate at least 4 hours or overnight, until thick and spoonable like pudding.
- Stir, then top with the raspberries and sliced almonds just before eating.
