Golden oven-baked tofu cubes with a quick savory peanut dip — a warm, craveable 19g-protein snack to bridge between meals. Fully vegan.
Ingredients
- 5 oz extra-firm tofu
- 1 tbsp cornstarch
- 1 tbsp low-sodium soy sauce
- 1 tbsp natural peanut butter
- 1 tsp rice vinegar
- 1 tsp maple syrup
- 2 tsp olive oil
Instructions
- Heat the oven to 220°C (425°F). Press the tofu under a towel 5 minutes, then cube it and toss with the olive oil, half the soy sauce and the cornstarch until each piece is lightly coated — the cornstarch is what gives the crisp shell.
- Spread the cubes apart on a lined baking sheet and bake 20-22 minutes, flipping once, until golden and crisp on the outside.
- Meanwhile whisk the peanut butter, remaining soy sauce, rice vinegar, maple syrup and 1-2 tsp warm water into a smooth, dippable sauce.
- Serve the hot tofu bites with the peanut dip alongside.
