Transform your leftover onions into a delicious caramelized onion and goat cheese tart, perfect for a light lunch or appetizer.

Ingredients

  • 2 medium onion
  • 100 grams goat cheese
  • 1 sheet puff pastry
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme
  • salt (to taste)
  • black pepper (to taste)

Instructions

  1. Peel and slice the onions thinly.
  2. In a skillet, heat olive oil over medium heat, add the sliced onions, and sauté until they are caramelized, about 15 minutes.
  3. Roll out the puff pastry on a baking sheet and score a border around the edges.
  4. Spread the caramelized onions evenly on the pastry, sprinkle with goat cheese and fresh thyme, and season with salt and pepper.
  5. Bake the tart in a preheated oven at 200°C (400°F) for about 15 minutes, or until the pastry is golden brown.
