Ingredients
- 2 slices whole-grain bread
- 1 ripe avocado
- 2 large eggs
- 1 tsp lemon juice
- 1 tsp olive oil
- 1 pinch red pepper flakes
Instructions
- Toast the bread until golden and crisp.
- While it toasts, fry the eggs in the olive oil over medium until the whites are set and the edges are lacy-crisp but the yolks still run, about 3 minutes.
- Mash the avocado with the lemon juice and a pinch of salt and spread it over the toast.
- Top each toast with a fried egg and finish with flaky salt, black pepper and red pepper flakes.
