A bright one-pan dinner of seared chicken, sweet peas, and peppers folded through lemony rice with fresh herbs.
Ingredients
- 12.5 oz boneless skinless chicken breast, cubed
- 1.75 cups cooked white rice
- 1 medium bell pepper, diced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1.5 tbsp olive oil
- 0.5 cup frozen peas
- 1.5 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- Season the cubed chicken with salt. Sear in the olive oil over medium-high for 5 minutes until golden and cooked through, then push to one side.
- Add the bell pepper and onion and cook 3 minutes until soft, then stir in the garlic for 30 seconds until fragrant.
- Add the cooked white rice and peas, tossing 3 minutes until the rice is heated through and the peas are bright and tender.
- Turn off the heat, stir through the lemon juice and parsley, and let it sit 1 minute before serving.
