Quick weeknight fried rice loaded with chicken, peppers, and egg in a savory soy glaze — better than takeout in twenty minutes.

Ingredients

  • 11 oz boneless skinless chicken breast, diced
  • 2 cups cooked white rice
  • 1 medium bell pepper, diced
  • 0.75 cup onion, diced
  • 3 cloves garlic, minced
  • 1.5 tbsp olive oil
  • 2 large eggs, beaten
  • 1.5 tbsp soy sauce
  • 0.3 cup green onions, sliced

Instructions

  1. Heat half the olive oil in a large skillet or wok over high, add the diced chicken, and stir-fry 4 minutes until golden and cooked through, then push to one side.
  2. Pour the beaten eggs into the empty side and scramble 1 minute until just set, then add the bell pepper, onion, and garlic and stir-fry 3 minutes until crisp-tender.
  3. Add the cooked white rice and remaining oil, spreading it out and letting it sit 1 minute to crisp before tossing, for about 3 minutes total.
  4. Pour in the soy sauce, toss to coat evenly, and finish with the sliced green onions.
