Quick weeknight fried rice loaded with chicken, peppers, and egg in a savory soy glaze — better than takeout in twenty minutes.
Ingredients
- 11 oz boneless skinless chicken breast, diced
- 2 cups cooked white rice
- 1 medium bell pepper, diced
- 0.75 cup onion, diced
- 3 cloves garlic, minced
- 1.5 tbsp olive oil
- 2 large eggs, beaten
- 1.5 tbsp soy sauce
- 0.3 cup green onions, sliced
Instructions
- Heat half the olive oil in a large skillet or wok over high, add the diced chicken, and stir-fry 4 minutes until golden and cooked through, then push to one side.
- Pour the beaten eggs into the empty side and scramble 1 minute until just set, then add the bell pepper, onion, and garlic and stir-fry 3 minutes until crisp-tender.
- Add the cooked white rice and remaining oil, spreading it out and letting it sit 1 minute to crisp before tossing, for about 3 minutes total.
- Pour in the soy sauce, toss to coat evenly, and finish with the sliced green onions.
