A hearty skillet hash of savory ground beef and crispy potatoes topped with a fried egg — comfort food any time of day.

Ingredients

  • 10.5 oz 90% lean ground beef
  • 1.5 medium potato, diced small
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1.5 tbsp olive oil
  • 2 large eggs
  • 0.5 tsp fine salt
  • 0.25 tsp black pepper

Instructions

  1. Heat the olive oil in a large skillet over medium-high, add the diced potato, and cook 10 minutes, turning occasionally, until golden and crisp-tender.
  2. Push the potato aside, add the ground beef and onion, and cook 6 minutes, breaking up the meat, until browned and no pink remains. Season with the salt and black pepper and stir in the garlic for 30 seconds.
  3. Make two wells in the hash and crack an egg into each, then cover and cook 3 to 4 minutes until the whites set but the yolks stay runny.
  4. Serve straight from the skillet, breaking the yolks over the hash.
