A hearty skillet hash of savory ground beef and crispy potatoes topped with a fried egg — comfort food any time of day.
Ingredients
- 10.5 oz 90% lean ground beef
- 1.5 medium potato, diced small
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1.5 tbsp olive oil
- 2 large eggs
- 0.5 tsp fine salt
- 0.25 tsp black pepper
Instructions
- Heat the olive oil in a large skillet over medium-high, add the diced potato, and cook 10 minutes, turning occasionally, until golden and crisp-tender.
- Push the potato aside, add the ground beef and onion, and cook 6 minutes, breaking up the meat, until browned and no pink remains. Season with the salt and black pepper and stir in the garlic for 30 seconds.
- Make two wells in the hash and crack an egg into each, then cover and cook 3 to 4 minutes until the whites set but the yolks stay runny.
- Serve straight from the skillet, breaking the yolks over the hash.
