Creamy, spiced tomato masala loaded with chickpeas and finished with yogurt, served over rice — a rich meatless dinner with real staying power.
Ingredients
- 3 cups canned chickpeas, drained
- 2/3 cup plain Greek yogurt
- 1 cup canned diced tomatoes
- 1/4 cup coconut milk
- 1 cup onion, diced
- 4 cloves garlic, minced
- 2 tbsp tikka masala paste
- 1 tbsp olive oil
- 0.9 cup cooked brown rice
Instructions
- Heat the olive oil in a pot over medium, add the diced onion, and cook 4 minutes until soft. Stir in the minced garlic and tikka masala paste and cook 1 minute until fragrant.
- Add the diced tomatoes and coconut milk, bring to a simmer, and cook 5 minutes until slightly thickened and deepened in color.
- Stir in the chickpeas and simmer 8 to 10 minutes until the sauce thickens and coats them.
- Turn off the heat and swirl in the Greek yogurt until creamy, then serve over the warm brown rice.
