Smoky Cajun-spiced chicken and sweet peppers folded through rice — a bold, one-pan dinner with a gentle kick.

Ingredients

  • 12.5 oz boneless skinless chicken breast, cubed
  • 1.5 cups cooked white rice
  • 1.5 medium bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1.5 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Toss the cubed chicken with the Cajun seasoning until coated. Heat the olive oil in a skillet over medium-high and sear the chicken 5 minutes until browned and cooked through, then remove.
  2. Add the bell pepper and onion to the skillet and cook 4 minutes until softened and lightly charred, then stir in the garlic for 30 seconds.
  3. Return the chicken, add the cooked white rice, and toss 2 minutes until everything is combined and heated through.
  4. Turn off the heat and stir through the parsley just before serving.
