These fluffy pancakes incorporate protein powder for a nutritious breakfast or snack option, perfect for using up leftover protein powder while keeping your meals balanced.
Ingredients
- 1 cup protein powder
- 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1 cup milk (or almond milk)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons cooking oil
- maple syrup (for serving) (to taste)
Instructions
- In a mixing bowl, combine the protein powder, whole wheat flour, and baking powder.
- In another bowl, whisk together the milk, egg, vanilla extract, and cooking oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium heat.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Stack the pancakes on a plate and serve with maple syrup.
