These fluffy pancakes incorporate protein powder for a nutritious breakfast or snack option, perfect for using up leftover protein powder while keeping your meals balanced.

Ingredients

  • 1 cup protein powder
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 cup milk (or almond milk)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons cooking oil
  • maple syrup (for serving) (to taste)

Instructions

  1. In a mixing bowl, combine the protein powder, whole wheat flour, and baking powder.
  2. In another bowl, whisk together the milk, egg, vanilla extract, and cooking oil.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Stack the pancakes on a plate and serve with maple syrup.
