Ingredients
- 10 oz large shrimp, peeled
- 2 links turkey sausage, sliced
- 1.5 medium bell pepper, sliced
- 2/3 cup onion, sliced
- 1.3 cups cooked brown rice
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
Instructions
- Heat the olive oil in a large skillet over medium-high and brown the sliced turkey sausage for 3 minutes until the edges crisp, then remove.
- Add the bell pepper and onion to the skillet and cook 4 minutes until softened and lightly charred.
- Pat the shrimp dry, toss with the Cajun seasoning, add to the skillet, and cook 2 to 3 minutes until pink and opaque.
- Return the sausage, toss everything together for 1 minute to combine the flavors, and serve over the warm brown rice.
