Ingredients
- 2 fillets tilapia fillets
- 1.5 cups cooked white rice
- 0.5 cup corn kernels
- 0.6 cup canned black beans, drained
- 0.5 medium avocado, sliced
- 3.5 tbsp salsa
- 1 tbsp blackening seasoning
- 1 tbsp olive oil
Instructions
- Pat the tilapia dry and coat both sides generously with the blackening seasoning, pressing it on.
- Heat the olive oil in a skillet over medium-high until nearly smoking, then cook the tilapia 3 minutes per side until a dark spice crust forms and the fish flakes easily.
- Warm the black beans and corn together in a small pot for 2 minutes.
- Divide the white rice between two bowls, flake the blackened tilapia on top, and add the beans, corn, avocado, and a spoonful of salsa.
