A quick and healthy chicken and vegetable stir-fry packed with flavor and nutrients.
Ingredients
- 1 lb chicken breast
- 1 medium bell pepper
- 1 cup broccoli florets
- 1 medium carrot
- 2 tbsp soy sauce
- 2 cloves garlic
- 1 tbsp ginger
- 2 tbsp olive oil
- salt (to taste)
- pepper (to taste)
Instructions
- Slice the chicken breast into thin strips.
- Chop the bell pepper, carrot, and broccoli into bite-sized pieces.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken strips to the skillet and sauté until cooked through, about 5-7 minutes.
- Add minced garlic and ginger to the skillet and sauté for 1 minute.
- Add the chopped vegetables to the skillet and stir-fry for about 5 minutes until tender.
- Pour soy sauce over the stir-fry and mix well to combine.
- Season with salt and pepper to taste.
- Serve the stir-fry hot over rice or noodles if desired.
