A quick and healthy chicken and vegetable stir-fry packed with flavor and nutrients.

Ingredients

  • 1 lb chicken breast
  • 1 medium bell pepper
  • 1 cup broccoli florets
  • 1 medium carrot
  • 2 tbsp soy sauce
  • 2 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp olive oil
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Slice the chicken breast into thin strips.
  2. Chop the bell pepper, carrot, and broccoli into bite-sized pieces.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Add the chicken strips to the skillet and sauté until cooked through, about 5-7 minutes.
  5. Add minced garlic and ginger to the skillet and sauté for 1 minute.
  6. Add the chopped vegetables to the skillet and stir-fry for about 5 minutes until tender.
  7. Pour soy sauce over the stir-fry and mix well to combine.
  8. Season with salt and pepper to taste.
  9. Serve the stir-fry hot over rice or noodles if desired.
