A vibrant and nutritious Mediterranean quinoa salad packed with protein and colorful vegetables, perfect for a healthy meal prep.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes
- 1 medium cucumber
- 1/4 cup red onion
- 1/2 cup feta cheese
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup parsley
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water, then bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Once cooked, remove from heat and let quinoa rest for 5 minutes.
- Fluff the quinoa with a fork and let it cool.
- Chop the cherry tomatoes, cucumber, and red onion.
- In a large mixing bowl, combine quinoa, chopped vegetables, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Garnish with chopped parsley and serve.
