Delicious bell peppers stuffed with a savory mixture of ground turkey, quinoa, and vegetables, perfect for meal prep.
Ingredients
- 2 whole Bell Peppers
- 1 lb Ground Turkey
- 1/2 cup Quinoa
- 1/2 medium Onion
- 2 cloves Garlic
- 1 can Diced Tomatoes
- 1 tbsp Olive Oil
- 1 tsp Italian Seasoning
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, boil 1 cup of water and add quinoa. Simmer for 15 minutes until water is absorbed.
- While quinoa cooks, prep the bell peppers by cutting the tops off and removing the seeds.
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until fragrant.
- Add ground turkey to the skillet, cook until browned, about 5-7 minutes.
- Stir in the cooked quinoa, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
- Stuff each bell pepper with the turkey and quinoa mixture.
- Place stuffed peppers upright in a baking dish and cover with foil. Bake for 20 minutes.
- Remove from oven and let rest for 5 minutes before serving.
- Serve warm, garnished with fresh herbs if desired.
