Transform leftover yoghurt into a flavorful marinade for chicken tacos, topped with fresh veggies and a tangy sauce.

Ingredients

  • 1 piece chicken breast
  • 1/2 cup plain yoghurt
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pieces corn tortillas
  • 1 piece avocado
  • 1 piece tomato
  • 1/4 piece onion
  • 1 tablespoon cilantro
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, combine yoghurt, lime juice, cumin, chili powder, salt, and black pepper to create the marinade.
  2. Add the chicken breast to the marinade, ensuring it is fully coated. Allow it to marinate for at least 15 minutes.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the marinated chicken to the skillet and cook for about 6-7 minutes on each side or until fully cooked through.
  5. While the chicken is cooking, chop the avocado, tomato, onion, and cilantro for the toppings.
  6. Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing it.
  7. Warm the corn tortillas in the skillet for about 30 seconds on each side.
  8. Assemble the tacos by placing sliced chicken on each tortilla and topping with avocado, tomato, onion, and cilantro.
