A tall stack of fluffy vegan pancakes boosted with pea protein and topped with banana and maple — a 30g-protein breakfast for training mornings. Fully vegan.
Ingredients
- 1/2 cup all-purpose flour
- 1 scoop vanilla pea protein powder
- 1 tsp baking powder
- 2/3 cup soy milk
- 1 tbsp maple syrup
- 1/2 medium banana
- 1 tsp neutral oil
Instructions
- Whisk the flour, pea protein and baking powder in a bowl. In another, whisk the soy milk and maple syrup.
- Pour the wet into the dry and stir just until combined — lumps are fine; overmixing makes the protein batter rubbery. Let it rest 3 minutes to thicken.
- Heat a lightly oiled nonstick pan over medium. Pour in pancakes and cook 2-3 minutes until bubbles form and the edges set, then flip and cook 1-2 minutes until golden and springy.
- Stack and top with sliced banana and a drizzle of maple syrup.
