Plump shrimp in a garlicky butter and white wine-style pan sauce tossed through pasta with parmesan and blistered tomatoes.
Ingredients
- 10 oz large shrimp, peeled
- 2.75 cups cooked pasta
- 2 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 tbsp olive oil
- 3 tbsp parmesan, grated
- 0.7 cup cherry tomatoes, halved
- 0.5 tsp fine salt
Instructions
- Cook the pasta in salted water until al dente, reserving a splash of the cooking water before draining.
- Pat the shrimp dry and season with the salt. Heat the olive oil in a skillet over medium-high and sear the shrimp 1 to 2 minutes per side until pink and just opaque, then remove.
- Lower the heat to medium, add the butter and minced garlic, and cook 1 minute until fragrant. Add the halved cherry tomatoes and cook 2 minutes until they soften.
- Return the shrimp, add the drained pasta and a splash of pasta water, and toss with the parmesan until glossy and coated.
