Sizzling fajita chicken and peppers piled over lime rice with salsa — all the fajita flavor in a fork-and-bowl format.
Ingredients
- 12 oz boneless skinless chicken breast, sliced
- 1.5 cups cooked white rice
- 1.5 medium bell peppers, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1.5 tbsp olive oil
- 1.5 tbsp lime juice
- 2 tbsp fresh cilantro, chopped
- 3.5 tbsp salsa
Instructions
- Season the sliced chicken with salt and a pinch of cumin if you have it, then sear in the olive oil over medium-high for 5 minutes until browned, and remove.
- Add the bell peppers and onion to the skillet and cook 4 to 5 minutes until charred at the edges and crisp-tender, stirring in the garlic for the final 30 seconds.
- Stir the lime juice into the cooked white rice and divide between two bowls.
- Return the chicken to the peppers to warm through, pile over the lime rice, and finish with the salsa and cilantro.
