Ingredients

  • 12 oz boneless skinless chicken breast, sliced
  • 1.5 cups cooked white rice
  • 1.5 medium bell peppers, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1.5 tbsp olive oil
  • 1.5 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 3.5 tbsp salsa

Instructions

  1. Season the sliced chicken with salt and a pinch of cumin if you have it, then sear in the olive oil over medium-high for 5 minutes until browned, and remove.
  2. Add the bell peppers and onion to the skillet and cook 4 to 5 minutes until charred at the edges and crisp-tender, stirring in the garlic for the final 30 seconds.
  3. Stir the lime juice into the cooked white rice and divide between two bowls.
  4. Return the chicken to the peppers to warm through, pile over the lime rice, and finish with the salsa and cilantro.
