A big, satisfying salad with seasoned cheeseburger beef, crisp lettuce, tomato, and crunchy potato — burger night, lightened up.

Ingredients

  • 10.5 oz 90% lean ground beef
  • 2.5 cups romaine lettuce, chopped
  • 0.6 cup tomato, diced
  • 1.5 oz cheddar cheese, grated
  • 0.5 cup onion, finely diced
  • 1 medium potato, cut in small cubes
  • 1 tbsp olive oil

Instructions

  1. Toss the potato cubes with the olive oil and a pinch of salt and roast at 425 F for 18 minutes, or pan-fry, until golden and crisp.
  2. Meanwhile, brown the ground beef with half the diced onion for 6 minutes until no pink remains, then drain the fat and stir in the cheddar off the heat until melted.
  3. Divide the chopped romaine, diced tomato, and remaining raw onion between two bowls.
  4. Top the salad with the cheesy beef and the crispy potato cubes, and serve with a drizzle of your favorite burger-style dressing.
