A big, satisfying salad with seasoned cheeseburger beef, crisp lettuce, tomato, and crunchy potato — burger night, lightened up.
Ingredients
- 10.5 oz 90% lean ground beef
- 2.5 cups romaine lettuce, chopped
- 0.6 cup tomato, diced
- 1.5 oz cheddar cheese, grated
- 0.5 cup onion, finely diced
- 1 medium potato, cut in small cubes
- 1 tbsp olive oil
Instructions
- Toss the potato cubes with the olive oil and a pinch of salt and roast at 425 F for 18 minutes, or pan-fry, until golden and crisp.
- Meanwhile, brown the ground beef with half the diced onion for 6 minutes until no pink remains, then drain the fat and stir in the cheddar off the heat until melted.
- Divide the chopped romaine, diced tomato, and remaining raw onion between two bowls.
- Top the salad with the cheesy beef and the crispy potato cubes, and serve with a drizzle of your favorite burger-style dressing.
