
Quinoa and Black Bean Salad

A nutritious and filling salad packed with protein and fiber, perfect for meal prep or a quick lunch.
Ingredients
- 1 cup Quinoa
- 1 can Black beans
- 1 cup Cherry tomatoes
- 1 medium Red bell pepper
- 1 cup Corn
- 1/2 medium Red onion
- 1/4 cup Cilantro
- 2 tablespoons Lime juice
- 2 tablespoons Olive oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
Instructions
- Rinse the quinoa under cold water.
- Boil 2 cups of water in a pot.
- Add the rinsed quinoa to the boiling water, reduce heat and simmer for 15 minutes until water is absorbed.
- Drain and rinse the black beans.
- Chop the cherry tomatoes, red bell pepper, and red onion.
- In a large bowl, mix the cooked quinoa, black beans, chopped vegetables, corn, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Let the salad rest for 10 minutes before serving to allow flavors to meld.
- Serve chilled or at room temperature.
