A nutritious and filling salad packed with protein and fiber, perfect for meal prep or a quick lunch.

Ingredients

  • 1 cup Quinoa
  • 1 can Black beans
  • 1 cup Cherry tomatoes
  • 1 medium Red bell pepper
  • 1 cup Corn
  • 1/2 medium Red onion
  • 1/4 cup Cilantro
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. Rinse the quinoa under cold water.
  2. Boil 2 cups of water in a pot.
  3. Add the rinsed quinoa to the boiling water, reduce heat and simmer for 15 minutes until water is absorbed.
  4. Drain and rinse the black beans.
  5. Chop the cherry tomatoes, red bell pepper, and red onion.
  6. In a large bowl, mix the cooked quinoa, black beans, chopped vegetables, corn, and cilantro.
  7. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  8. Pour the dressing over the salad and mix well.
  9. Let the salad rest for 10 minutes before serving to allow flavors to meld.
  10. Serve chilled or at room temperature.
