A quick and healthy stir-fry featuring tender chicken and vibrant vegetables, perfect for meal prep.
Ingredients
- 1 lb chicken breast
- 1 cup broccoli
- 1 medium bell pepper
- 1 medium carrot
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 cloves garlic
- 1 inch ginger
- salt (to taste)
- pepper (to taste)
Instructions
- Slice the chicken breast into thin strips.
- Chop the broccoli into florets, slice the bell pepper, and julienne the carrot.
- Mince the garlic and ginger.
- Heat olive oil in a large pan over medium-high heat.
- Add the chicken strips to the pan and sear until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and ginger, stirring for 1 minute until fragrant.
- Add the chopped vegetables to the pan and stir-fry for about 5 minutes until tender-crisp.
- Pour in the soy sauce, salt, and pepper, mixing well to combine.
- Cook for an additional 2 minutes to heat through, then remove from heat.
- Serve the stir-fry hot over rice or noodles, if desired.
