A quick and healthy stir-fry featuring tender chicken and vibrant vegetables, perfect for meal prep.

Ingredients

  • 1 lb chicken breast
  • 1 cup broccoli
  • 1 medium bell pepper
  • 1 medium carrot
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 inch ginger
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Slice the chicken breast into thin strips.
  2. Chop the broccoli into florets, slice the bell pepper, and julienne the carrot.
  3. Mince the garlic and ginger.
  4. Heat olive oil in a large pan over medium-high heat.
  5. Add the chicken strips to the pan and sear until browned and cooked through, about 5-7 minutes.
  6. Add the minced garlic and ginger, stirring for 1 minute until fragrant.
  7. Add the chopped vegetables to the pan and stir-fry for about 5 minutes until tender-crisp.
  8. Pour in the soy sauce, salt, and pepper, mixing well to combine.
  9. Cook for an additional 2 minutes to heat through, then remove from heat.
  10. Serve the stir-fry hot over rice or noodles, if desired.
