Crispy seasoned ground pork over cilantro-lime rice with black beans, avocado, and salsa — a fast carnitas-inspired bowl.
Ingredients
- 10 oz lean ground pork
- 1.5 cups cooked white rice
- 0.75 cup canned black beans, drained
- 4 tbsp salsa
- 0.5 medium avocado, sliced
- 1 tbsp lime juice
- 1.5 tbsp chipotle in adobo, minced
- 0.25 tsp fine salt
Instructions
- Brown the ground pork in a dry skillet over medium-high for 6 to 7 minutes, pressing it into the pan and breaking it up, until deeply browned and crisp at the edges.
- Stir in the minced chipotle and salt and cook 1 minute until fragrant, then add the black beans and heat through.
- Stir the lime juice into the warm white rice.
- Divide the cilantro-lime rice between two bowls, top with the crispy pork and beans, and finish with the salsa and sliced avocado.
