A vibrant stir-fry that combines leftover chicken and fresh vegetables with a spicy kick, served over a bed of spaghetti squash for a healthy twist.

Ingredients

  • 1 medium onion
  • 2 cloves garlic
  • 1 cup chicken
  • 1 medium bell pepper
  • 1 medium spaghetti squash
  • 1 cup butternut squash
  • 1/4 cup cilantro
  • 1 teaspoon turmeric
  • salt (to taste)
  • pepper (to taste)
  • 1 teaspoon sugar
  • hot sauce (to taste)
  • 2 tablespoons oil

Instructions

  1. Cut the onion, bell pepper, and butternut squash into small cubes.
  2. Slice the garlic and set aside.
  3. Cut the spaghetti squash in half, scoop out the seeds, and place cut side down in a microwave-safe dish with a little water.
  4. Microwave the spaghetti squash for about 10 minutes until tender.
  5. In a large skillet, heat oil over medium heat, then add the onion and sauté for 3-4 minutes until translucent.
  6. Add garlic, bell pepper, and butternut squash to the skillet and sauté for another 5-7 minutes until softened.
  7. Stir in the cooked chicken, turmeric, salt, pepper, sugar, and hot sauce, cooking for an additional 3-4 minutes until heated through.
  8. Once the spaghetti squash is done, use a fork to scrape out the strands and place them on plates.
  9. Top the spaghetti squash with the spicy chicken and vegetable stir-fry, then garnish with cilantro.
