
Spicy Chicken & Squash Stir-Fry with Spaghetti Squash

A vibrant stir-fry that combines leftover chicken and fresh vegetables with a spicy kick, served over a bed of spaghetti squash for a healthy twist.
Ingredients
- 1 medium onion
- 2 cloves garlic
- 1 cup chicken
- 1 medium bell pepper
- 1 medium spaghetti squash
- 1 cup butternut squash
- 1/4 cup cilantro
- 1 teaspoon turmeric
- salt (to taste)
- pepper (to taste)
- 1 teaspoon sugar
- hot sauce (to taste)
- 2 tablespoons oil
Instructions
- Cut the onion, bell pepper, and butternut squash into small cubes.
- Slice the garlic and set aside.
- Cut the spaghetti squash in half, scoop out the seeds, and place cut side down in a microwave-safe dish with a little water.
- Microwave the spaghetti squash for about 10 minutes until tender.
- In a large skillet, heat oil over medium heat, then add the onion and sauté for 3-4 minutes until translucent.
- Add garlic, bell pepper, and butternut squash to the skillet and sauté for another 5-7 minutes until softened.
- Stir in the cooked chicken, turmeric, salt, pepper, sugar, and hot sauce, cooking for an additional 3-4 minutes until heated through.
- Once the spaghetti squash is done, use a fork to scrape out the strands and place them on plates.
- Top the spaghetti squash with the spicy chicken and vegetable stir-fry, then garnish with cilantro.
