Seared chicken and blistered cherry tomatoes tossed through pesto pasta with parmesan — a fresh, fast Italian dinner the whole table loves.
Ingredients
- 11 oz boneless skinless chicken breast, cubed
- 2.5 cups cooked pasta
- 2.5 tbsp basil pesto
- 0.75 cup cherry tomatoes, halved
- 3 tbsp parmesan, grated
- 1 tbsp olive oil
- 0.5 tsp fine salt
Instructions
- Cook the pasta in salted water until al dente, reserving a splash of the cooking water before draining.
- While the pasta cooks, season the chicken with the salt and sear in the olive oil over medium-high for 5 to 6 minutes until golden and cooked through.
- Add the halved cherry tomatoes to the chicken and cook 2 minutes until they soften and burst.
- Add the drained pasta and pesto to the skillet, toss to coat, and loosen with a splash of the reserved pasta water. Finish with the grated parmesan.
