Seared chicken and blistered cherry tomatoes tossed through pesto pasta with parmesan — a fresh, fast Italian dinner the whole table loves.

Ingredients

  • 11 oz boneless skinless chicken breast, cubed
  • 2.5 cups cooked pasta
  • 2.5 tbsp basil pesto
  • 0.75 cup cherry tomatoes, halved
  • 3 tbsp parmesan, grated
  • 1 tbsp olive oil
  • 0.5 tsp fine salt

Instructions

  1. Cook the pasta in salted water until al dente, reserving a splash of the cooking water before draining.
  2. While the pasta cooks, season the chicken with the salt and sear in the olive oil over medium-high for 5 to 6 minutes until golden and cooked through.
  3. Add the halved cherry tomatoes to the chicken and cook 2 minutes until they soften and burst.
  4. Add the drained pasta and pesto to the skillet, toss to coat, and loosen with a splash of the reserved pasta water. Finish with the grated parmesan.
