Seared cubes of sirloin and crispy potatoes tossed in garlic butter in one skillet — a steakhouse dinner in half an hour.

Ingredients

  • 12 oz sirloin steak, cut in cubes
  • 1.5 medium potato, diced small
  • 1.5 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp fine salt
  • 0.25 tsp black pepper

Instructions

  1. Parboil the diced potato in salted water for 6 minutes until just tender, then drain well so it can crisp.
  2. Heat the olive oil in a large skillet over medium-high, add the potatoes in a single layer, and cook 8 minutes, turning, until golden and crisp, then push to one side.
  3. Season the sirloin cubes with the salt and black pepper, add to the hot skillet, and sear 3 to 4 minutes, turning, until browned outside and pink within.
  4. Lower the heat, add the butter and minced garlic, and toss the steak and potatoes 1 minute until coated in garlic butter. Finish with the chopped parsley.
