Zesty lime chicken over rice with black beans, peppers, and salsa — a fresh, filling burrito bowl you build in one skillet.
Ingredients
- 12 oz boneless skinless chicken breast, cubed
- 1.5 cups cooked white rice
- 1 medium bell pepper, sliced
- 0.75 cup onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1.5 tbsp lime juice
- 3 tbsp fresh cilantro, chopped
- 0.75 cup canned black beans, drained
- 3.5 tbsp salsa
Instructions
- Season the chicken with salt and sear in the olive oil over medium-high for 5 minutes until golden, then push aside, add the bell pepper and onion, and cook 3 minutes until crisp-tender.
- Stir in the minced garlic and cook 30 seconds, then add the black beans and heat through for 2 minutes.
- Stir the lime juice and most of the cilantro into the cooked white rice, then divide between two bowls.
- Top the rice with the chicken, peppers, and beans, spoon over the salsa, and finish with the remaining cilantro.
