Ingredients

  • 12 oz boneless skinless chicken breast, cubed
  • 1.5 cups cooked white rice
  • 1 medium bell pepper, sliced
  • 0.75 cup onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1.5 tbsp lime juice
  • 3 tbsp fresh cilantro, chopped
  • 0.75 cup canned black beans, drained
  • 3.5 tbsp salsa

Instructions

  1. Season the chicken with salt and sear in the olive oil over medium-high for 5 minutes until golden, then push aside, add the bell pepper and onion, and cook 3 minutes until crisp-tender.
  2. Stir in the minced garlic and cook 30 seconds, then add the black beans and heat through for 2 minutes.
  3. Stir the lime juice and most of the cilantro into the cooked white rice, then divide between two bowls.
  4. Top the rice with the chicken, peppers, and beans, spoon over the salsa, and finish with the remaining cilantro.
