All the flavor of a bacon-free cheeseburger in a bowl — seasoned beef, melty cheddar, crisp lettuce and tomato over roasted potato wedges.
Ingredients
- 10.5 oz 90% lean ground beef
- 2 cups romaine lettuce, chopped
- 0.7 cup cherry tomatoes, halved
- 1.5 oz cheddar cheese, grated
- 1 large potato, cut in wedges
- 1 tbsp olive oil
- 0.5 tsp fine salt
- 0.25 tsp black pepper
Instructions
- Heat the oven to 425 F. Toss the potato wedges with the olive oil, salt, and black pepper on a sheet pan and roast 20 minutes, flipping once, until golden and crisp.
- Meanwhile, brown the ground beef in a skillet over medium-high for 5 to 6 minutes, breaking it up, until no pink remains, then drain the fat.
- Turn off the heat, scatter the grated cheddar over the beef, and stir until it melts into the meat.
- Divide the chopped romaine and cherry tomatoes between two bowls, add the roasted potato wedges, and top with the cheesy beef.
