Ingredients

  • 2 chops boneless pork chops
  • 0.5 cup onion, thinly sliced
  • 1.5 tbsp unsalted butter
  • 1 tbsp pure maple syrup
  • 1 large potato, diced
  • 1 tbsp olive oil
  • 0.5 tsp fine salt
  • 0.25 tsp black pepper

Instructions

  1. Boil or roast the diced potato until tender, about 15 minutes, then toss with a little of the butter and a pinch of salt; keep warm.
  2. Season the pork chops with the salt and black pepper. Sear in the olive oil over medium-high for 4 minutes per side until browned and just cooked through, then rest on a plate.
  3. Add the remaining butter and sliced onion to the pan and cook 4 minutes until soft and golden, scraping up the browned bits.
  4. Stir in the maple syrup and a splash of water, simmer 2 minutes into a glossy pan sauce, then spoon it over the rested chops and serve with the potatoes.
