Crispy breaded chicken cutlets blanketed in marinara and melted mozzarella, cooked entirely in one skillet for a weeknight-fast Italian classic.
Ingredients
- 12.5 oz boneless skinless chicken breast
- 0.75 cup marinara sauce
- 2 oz mozzarella, shredded
- 3 tbsp parmesan, grated
- 0.5 cup panko breadcrumbs
- 1.5 tbsp olive oil
- 1 large egg, beaten
- 0.5 tsp fine salt
Instructions
- Slice each breast horizontally into thin cutlets and season with the salt. Dip each cutlet in the beaten egg, then press into the panko mixed with the parmesan until fully coated.
- Heat the olive oil in an oven-safe skillet over medium-high and fry the cutlets 3 minutes per side until deeply golden and crisp.
- Spoon the marinara over each cutlet and scatter the shredded mozzarella on top.
- Cover the skillet and cook 3 to 4 minutes over medium-low, or slide under the broiler, until the cheese is bubbling and the chicken is cooked through.
